Here is a simple recipe for tofu scramble:
1 block of firm or extra-firm tofu, crumbled
1 tablespoon olive oil
1/2 onion, chopped
1 green pepper, chopped
1 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Heat the olive oil in a non-stick pan over medium heat.
Add the tofu and cook, stirring occasionally, until browned.
Add the onion and green pepper and cook, stirring occasionally, until softened.
Add the turmeric, cumin, garlic powder, onion powder, salt, and pepper and cook for 1 minute more.
Serve immediately with your favorite toppings.
