Vegetarian Quesadillas


  • 4 large flour tortillas

  • 1 can of black beans, drained and rinsed

  • 1/2 cup of corn kernels

  • 1/2 cup of diced bell peppers

  • 1/2 cup of shredded cheddar cheese

  • 1/4 cup of chopped fresh cilantro

  • 1 tablespoon of olive oil


  1. In a mixing bowl, combine the black beans, corn, bell peppers, cheddar cheese, and cilantro.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Place a tortilla in the skillet and spoon the bean mixture onto one half of the tortilla.

  4. Fold the tortilla over and press down lightly with a spatula.

  5. Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.

  6. Remove from heat and repeat with the remaining tortillas and bean mixture.

  7. Slice the quesadillas into wedges and serve with your favorite salsa or guacamole.
